Our favourite Chili

I was driving home from work last week and heard on the radio that the hot temperatures we’ve been having all summer are expected to last until mid-October.

I LIVE for Autumn. So, I was pretty devastated to hear this news.

Not only do I love the weather – cool, crisp autumn weather that is like no other season but I love the foods on fall – apples in my pie, pumpkin in my coffee, and just all out comfort in my belly in the form of chilis, stews and casseroles.

So, you can imagine my excitement, a term I am using somewhat loosely when I awoke to a very cool Saturday – which turned into a dreary and rainy day.

You know what Saturdays like that are good for?

Well, for Jon and me, we decided to hit up a couple of antique stores and in general just spending the day exploring a few towns around our city. I ended up finding a cool wooden antique ice-cream scoop that I can’t wait to take pictures of – probably will have to wait a while for that one though.

And for the Russell, he’d put his day into pictures:

And, a bunch of ‘zzzz’s in between…

He is definitely the more athletically challenged  of our two furry-ones! Most of his days are spent similar to the above pictures. I think there’s only two things he looks forward to everyday – breakfast and dinner! And most nights, he is out-like-a-light around 8:30.

Anyway, back to our Saturday – a day out in the rain left us wanting something warm and comforting for dinner, chili. It’s pretty much our “kick-off” meal as a welcome to Fall. We had a similar meal last year too.

Our favourite Chili

Until this chili recipe, I never had a “go-to” recipe for chili. But this is by far, the best chili in both of our books. It’s a subtly sweet and spicy chili that is just the right consistency – not too thin and not too thick – just enough to be able to sop it up with some fresh-baked bread. It was, to our surprise, the best chili we’ve had – all due to one unexpected ingredient – sugar! I had never, ever seen a recipe for chili that had sugar and I almost passed on it for that reason. But, considering we fought over the leftovers for this one, do not pass this one by – it just might end up being your favourite chili too!

Chili Recipe

Recipe type: Stew 

Ingredients

  • 1-1/2 lbs extra lean ground beef
  • 1 small onion
  • 1 green pepper, diced
  • 1 jalapeno, diced
  • 1 can beans in tomato sauce*
  • 1 (14 oz) can tomato sauce, preferably with no salt added
  • 1 (14 oz) can diced tomatoes, preferably with no salt added
  • 1 (6 oz) can tomato paste
  • ½ packet chili seasoning
  • ¼ cup sugar
  • black pepper, to taste
  • Shredded cheese, sour cream, and green onions – optional

Instructions

  1. Brown the ground beef and onion in a large heavy bottomed pan over medium-high heat and drain grease.
  2. Add the green peppers, jalapeno and beans with the sauce. Then add the sugar, pepper (to taste) and chili seasoning and stir.
  3. Add cans of tomato sauce and diced tomatoes, including the juice. Add the tomato paste and then fill the can with water and add it to the pot.
  4. Bring ingredients to a boil, then reduce heat to a simmer. Simmer for about an hour.
  5. Serve hot sprinkled with cheese, sour cream and green onions, if desired.

Notes*The original recipe calls for “chili beans in sauce” which I couldn’t find, so I used beans in tomato sauce which worked perfectly.

Ma Po Tofu Recipe

I love Chinese food – well I’m not sure you’d call it authentic Chinese food. But really, it’s the food that you get at the local Chinese take-out restaurants – the chicken with broccoli, the chow mein, the noodles – you know, Americanized (or Canadianized, I suppose) Chinese food. We love the sweet, spicy flavours of this cuisine but not the calories that come along with it. And since we love the flavours of this food so much, we often make what’s called “take-out, fake-out” food at home. We try to replicate our favourite take-out meals at home to cut the calorie and cost impact of their take-out versions.

This recipe in particular is not one I’ve ever had as a take-out option and it’s not really one I expected a lot from when I put it on our menu last week either. BUT – the flavours totally knocked our socks off and we may just have finished off the entire dish that night. This dish was, and I don’t say this lightly, was one of THE BEST dishes we’ve had. The ground pork got caramelized from the high heat and the tofu was flavourful and chewy and the sauce was slightly spicy with a hint garlic – so so perfect!

The dish itself comes together very quickly – from start to finish took no longer than 30 minutes for me. In fact, the prep time is way longer than cook time for this one – the whole dish cooks in less than 10 minutes!

Ma Po Tofu Recipe

Prep time:  15 mins

Cook time:  10 mins

Total time:  25 mins

Serves: 4 Ingredients

  • 2.5 tablespoons lower-sodium soy sauce, divided
  • 2 tablespoons dry sherry or Shaoxing wine, divided
  • ½ pound lean ground pork
  • 1 tablespoon peanut oil
  • 1 (14-ounce) package extra-firm tofu, drained and cubed
  • 3 tablespoons chopped green onions
  • 1 tablespoon grated peeled fresh ginger
  • 1 tablespoon chicle paste with garlic (such as sambal oelek)
  • 2 teaspoons minced garlic
  • ¼ teaspoon salt
  • 1 cup fat-free lower-sodium chicken broth
  • 2 teaspoons cornstarch
  • 1 tablespoon water
  • 2 cups rice, cooked

Instructions

  1. Combine 1 tablespoon soy sauce, 1 tablespoon sherry and pork; set aside.
  2. Mix tofu with ½ tablespoon soy sauce. Heat oil in a work over high heat. Add tofu mixture; stir-fry 3 minutes. Add pork mixture; stir-fry 3 minutes. Stir in onions and next 4 ingredients (through salt); stir-fry 30 seconds. Add remaining 1 tablespoon soy sauce, remaining 1 tablespoon sherry or cooking wine and broth; cook 2 minutes.
  3. Combine cornstarch and water; stir with a whisk. Add to work; cook 30 seconds or until slightly thick, stirring constantly. Serve over rice.

NotesOne big change I made was making my ground pork from lean pork chops in the food processor. This was more out of necessity as the grocery store had no ground pork – but the result was really great and took such little time that I will be doing this in the future. In order to grind the pork, I froze it slightly (about 15 minutes) and then pulsed it in the food processor until it was slightly smaller than peas.

CARDAMON AND ROSEWATER POACHED PEARS

The Stevesroastbeef’s Note: This is a lovely light and delicate dessert to serve at the end of a heavy meal. It’s taken from one of my favourite recipe blog of the last few years, BeefsteakVeg.  Serve the pears with good vanilla ice cream and a drizzle of runny honey if you have a sweeter tooth. 

 CARDAMON & ROSEWATER POACHED PEARS

Serves 6
Ingredients:
400ml rosewater
12/16 cardamon pods, bruised or crushed a little
300g caster sugar
6 smooth skinned pears
chopped pistachio nuts for scattering

To prepare

Fill a large saucepan almost to the brim with boiling water and bring to the boil over a medium-high heat. Add the rosewater, crushed cardamon pods and sugar, reduce the heat and simmer gently for 20 minutes. 

Peel the pears carefully, leaving the stems intact.  Remove the cores from the bases of the pears using a small sharp knife.  Place the peeled and cored pears upright int he poaching liquid and poach for 30 – 35 minutes, or until tender – you should be able to pierce them with a cocktail stick with no resistance.  Remove the pears from the poaching liquid and set aside.

Serve warm with a little of the poaching liquid and a scattering of chopped pistachios.
